Fox Run Cafe Is Doing Two Things Well, Which Is Rarer Than It Sounds

Most places that try to do brunch and burgers end up doing neither particularly well. Fox Run Cafe on East Colfax is one of the exceptions. 5280 put their burger on a best-in-Denver list, and the place regularly pulls two-hour waits on weekends. That combination got my attention.
Fox Run sits at 3550 E Colfax, which puts it right in the mix of one of Denver's more interesting stretches of road β not quite Capitol Hill, not quite Park Hill, just Colfax doing its thing. The space is on the smaller side, which explains the wait times. On a busy weekend morning, this place fills up fast and doesn't turn tables quickly because people aren't rushing. The food is worth sitting with.
What I Actually Ordered
I went with the burger, mostly because I wanted to see if the 5280 recognition held up. It did. The patty has real weight to it β not a smash situation, not a thick steakhouse brick, somewhere in the middle where the meat actually has flavor before you add anything on top of it. The bun holds together. That sounds like a low bar, but you'd be surprised how many places can't clear it. This one's built properly.
My wife went the brunch route and had no regrets about it either. The menu isn't trying to reinvent anything β eggs, pancakes, that general territory β but the execution is solid and the portions are reasonable. We've been to places that lean harder into the aesthetic of brunch than the actual food, and this isn't that. Fox Run seems more focused on getting the food right than making it look good for a photo, which I respect even if it's slightly less useful for a YouTube thumbnail.
What Works and What Doesn't
The dual menu is the real selling point. If you're coming with someone who wants eggs Benedict and someone who wants a burger at noon on a Saturday, you're not compromising here. Both people win, which is not always the case. Great spot for a group where nobody can agree on what kind of meal they're in the mood for β the menu gives everyone an out.
The wait is real. Two hours on a weekend morning isn't an exaggeration, from what I've seen and heard. If you're not in a rush and you've got someone to talk to, it's fine. If you need to be somewhere at a specific time, plan around it or go on a weekday. I haven't had trouble getting seated faster on a weekday, and the food is the same either way.
Parking on Colfax is always a minor production. Street parking exists but it moves, and the neighborhood isn't exactly flush with lots. Give yourself a few extra minutes. It's not a dealbreaker, just worth knowing before you circle the block twice already hungry.
Worth Going Out of Your Way For
Capitol Hill has a few spots I keep coming back to β Aloy Thai Eatery over on 7th is one of the most consistent meals in the neighborhood, and if you're in the mood for something more sit-down in the evening, Potager on Ogden does nice work. But for a weekend mid-morning meal where you're not sure if you want breakfast food or lunch food, Fox Run fills that gap better than anything else I've found in this part of the city.
The burger alone would get me back. The fact that you can also get a solid plate of eggs at the same table makes it one of the more versatile spots on this stretch of Colfax. If you're already in the neighborhood, make the stop. If you're driving across town specifically for it, go on a weekday and skip the wait situation entirely.
