Fox Run Cafe comes up a lot when people ask me about brunch in Denver. It sits at 3550 E Colfax Ave, which puts it right in that stretch of Capitol Hill where the street still feels like actual Denver โ€” not overly polished, just neighborhood. The place has built a serious reputation, and when 5280 starts calling out your burgers as some of the best in the city, that's enough for me to make the drive.

The Wait Is Real

Fair warning upfront: weekend waits can stretch to two hours. I've seen people complain about that, but honestly, if a spot on Colfax is consistently pulling that kind of crowd on a Saturday morning, something is going right. It's worth factoring into your plans rather than showing up at 10am expecting to walk in. If you're the type who gets hangry fast, maybe grab a coffee nearby and put your name in.

What Makes This Place Interesting

Most brunch spots are brunch spots. That's it. You go, you get eggs and a pancake, you leave. Fox Run does something a little different โ€” they're running a menu where the brunch side and the burger side are both legitimate options, not an afterthought. That's actually harder to pull off than it sounds. Plenty of places slap a burger on a brunch menu and call it done. The fact that 5280 specifically recognized their burgers as among Denver's best means this isn't just padding the menu โ€” they're actually cooking.

That dual identity is what drew me in as much as anything. I'm not always in a pancakes headspace, and having a real burger option at a brunch spot without feeling like I'm ordering off the wrong menu is something I appreciate.

The Food

The brunch side is what built Fox Run's reputation, and the crowds on weekends back that up. Denver has no shortage of brunch spots competing for the same customers, and this one has managed to stay consistently at the top of the local conversation โ€” that doesn't happen by accident. The menu covers the expected morning territory, but the execution is clearly what keeps people coming back and tolerating that two-hour wait.

The burgers are the quieter part of the story, but arguably the more surprising one. Getting recognized by 5280 puts you in real company in this city. That's not a Yelp badge โ€” that's a publication that pays attention to the Denver food scene specifically, so when they say your burger belongs on a best-of list, it carries weight. For a cafe on Colfax that most people think of as a brunch spot first, that's a pretty solid second act.

What to Know Before You Go

The address is straightforward โ€” 3550 E Colfax, easy to find. Street parking on Colfax can be hit or miss depending on the time, so leave yourself some buffer there. The wait situation is the main thing to plan around. If you go on a weekday, you're probably in better shape. Weekends are a different story, and if you've got somewhere to be by noon, that's worth thinking through.

It's also worth deciding before you walk in whether you're going brunch or burger, just so you're not making that call while standing hungry at the host stand. Both are clearly worth ordering โ€” I'd probably do the burger if I were going back for lunch on a quieter day, and go full brunch mode on a weekend when I have time to actually sit with it.

My Take

Fox Run Cafe is one of those places that earns its reputation in a pretty straightforward way โ€” good food, consistent enough that people keep coming back, and versatile enough that you're not locked into one kind of meal. The wait is the biggest friction point, but it's a known quantity at this point, not a surprise. If you're building a brunch list for Denver, this one belongs on it. And if you find yourself wanting a burger instead of eggs at 11am on a Sunday, Fox Run is one of the few spots in the city where that's a genuinely good call.
