Egg Harbor Cafe came onto my radar because the waitlist times were already hitting an hour-plus within weeks of opening. That's not normal for the suburbs, and it made me curious enough to make the drive down to Highlands Ranch to see what was actually going on. A Chicago import landing in the South Denver suburbs doesn't always translate β plenty of regional chains lose something in the move β but the lines suggested this one might be different.

What You're Walking Into
The location is on S University Blvd, which is exactly as suburban-strip-mall as it sounds. Don't let that put you off. Inside, it's busy in the way that places get busy when the food is actually good, not just when they're riding a wave of opening-week novelty. The crowd skews family-heavy, which makes sense given that Egg Harbor brings a genuinely large kids' menu β not the usual grilled cheese and chicken tenders afterthought, but real options. If you're doing a family brunch and the kids are picky, this place has more room to work with than most.
The Gluten-Free Situation
This is where Egg Harbor separates itself from your average brunch spot. They have a dedicated gluten-free menu β not a couple of substitutions tacked onto the bottom of a regular menu, but a full separate menu covering pancakes, skillets, and more. For anyone in Denver who's been navigating gluten-free brunch options, that's a meaningful difference. Most places are accommodating in theory and frustrating in practice. This seems like they actually built around it from the start.
What I'd Order
The beef tallow hash browns are the thing everyone's talking about and the thing I'd tell you to order without hesitation. Cooked in beef tallow, they've got a crust and depth that regular hash browns just don't have β it's a small detail that makes a noticeable difference on the plate. It's the kind of thing where you understand immediately why people are driving out here for it. The skillets are also worth attention, particularly if you're going the gluten-free route, and the menu is wide enough that you're not going to be stuck making a compromise order.

The waitlist situation is real. Waits of an hour or more are happening regularly, and showing up without a plan is going to cost you time you didn't budget for. The move is to join the online waitlist before you leave your house β you can get in the queue remotely, which means you're not just standing around a parking lot waiting for your name to be called. Highlands Ranch isn't exactly a quick detour from central Denver, so treating this as a destination rather than a spontaneous stop makes the logistics easier. If you're already heading south toward the Tech Center or beyond, it fits naturally into that direction.
Parking in the strip center is straightforward β that part's fine. The bigger variable is just time. Weekend mornings are going to be the worst for waits, and if you can swing a weekday visit, you'll probably have a smoother experience.
The Bottom Line
Egg Harbor Cafe is a solid brunch spot that's doing a few specific things better than most places in the metro β the beef tallow hash browns and the dedicated gluten-free menu are real differentiators, not just marketing. The drive to Highlands Ranch is worth it if you have a reason to be out that way, and the online waitlist makes the whole process manageable if you plan ahead. Just don't show up cold on a Saturday morning expecting a quick meal.
