If this were outside of the airport, I would probably still give this 4.5 but for an airport, this is truly exceptional. Service was very friendly (Natasha is awesome) and fast. Breakfast sandwich was delicious! The only knock for us was against the breakfast burrito as the meat was sparse and instead of a tortilla, it was on a wrap style flatbread. Being from New Mexico, it didn’t pass as a burrito & would be less misleading if it was renamed “breakfast wrap”. Breakfast potatoes that came with both dishes were fantastic-flavorful and crispy and loved that they were a mixture of purple, white and sweet potatoes. Overall, highly recommend.

Many clearly marked vegan options and great service. The country fried tofu dish was was one of the better salads I've had while out to eat, though I wish I'd got the veggie burger. Nothing wrong with the salad, it's just not what I was craving.

Root Down DIA serves surprisingly excellent salmon… yes, at an airport, where culinary expectations usually go to die. I ordered the beet salad with added salmon, and they absolutely nailed it. Flavorful, fresh, and suspiciously competent for a place located between gates and rolling suitcases. 10/10 would recommend!! Especially if you want a meal that makes you briefly forget you’re about to sit in a metal tube for several hours.

Amazing little hidden gem right in the center of terminal C. Food is fresh and light. Salads are made with everything but iceberg lettuce. Absolutely amazing. Eggs are real, light and fluffy. And they have real tea in silk bags. They have tables for 1 so I didn’t feel like I was eating alone. Windows are amazing. I forgot I was in an airport! 12/10 in every way. And Cami who works there… Amazing!!! Holy wow. Talk about amazing customer service, I felt like I was catching up with a friend from years past.
