Damn, this place makes great food! Manuel Taco is one of those unassuming little taco trucks you only find because some hero on Reddit mentioned it in passing—parked in a nondescript lot off Bruce Randolph, looking like it might sell discount hubcaps instead of life-changing food. But no. Inside that modest metal box is culinary wizardry. The breakfast burritos? Best in the city. Full stop. They’re the kind of burritos that make you reconsider every other breakfast decision you’ve ever made. The tacos are outstanding too—simple, perfectly seasoned, and made by a single dude who is very clearly working his butt off while simultaneously achieving greatness on a griddle the size of a clipboard. It’s cash only, which somehow feels right. Places this good should not be tied to the tyranny of modern banking. Bring a few bills, park in the most unremarkable parking lot in Denver, and prepare to walk away wondering how something so low-key can taste so legendary. Go. Seriously. Go.

Truly the best breakfast burritos I’ve ever had in my life. Everything is cooked fresh and each burrito is made with love and care. They may not be ready to grab and go but they are well worth the wait in the parking lot. Perfectly cooked, hot, cheesy, beany, tortilla grilled. I’ve considered just ordering a large side of the beans. Manuel has a special gift. My favorite is the chorizo y nopales breakfast burrito. Those tacos are fantastic too. But so are all of the meat options I’ve tried, especially his al pastor. Grab a few and enjoy with a coke in a bottle and you won’t be disappointed. This is a no fuss food truck though, only a few plastic chairs, usually just eat from our trunk or take the to park across the street.

After a night out, downtown, we drove 10 minutes to try Manuel Taco for a breakfast burrito. The best breakfast burritos we have ever had. I recommend this place 100%, hands-down. so delicious!😋 Very nice people too! We came back for two more to bring home for dinner later. This place should get a visit from “Diners, Drive-ins, and Dives” on the Food Network.
