Had such a great experience at La Diabla! My server Keston was amazing — super attentive and knowledgeable of the restaurant and menu. The food was as amazing as I had heard it would be. Their Michelin guide sandwich was perfection. Keston told me they make their own bread, and you could tell. It was crusty, soft and a little chewy, and they dip it in a guajillo chili oil which adds so much flavor, but doesn’t make the bread soggy at all. The meat was perfectly cooked — so moist and flavorful, and the rest of the sandwich fillings were so balanced and fresh. My margarita was also perfectly balanced — not too sweet with perfect acidity. I can’t wait to go back and try more!

I recently tried La Diabla Pozole y Mezcal on Wednesday, and if you're looking for a rare Denver spot with great food, amazing specials, and a chill vibe, this is it! You know you're in the right spot when you can see one of the chef's working the trompo right outside! I ordered the al pastor and asada tacos, along with huge bowls of pozole Blanco and pozole negro- WOW!! I was a little nervous about the spice, but the flavors were so well balanced. We also had a special treat with the fish tacos, and I encouraged someone in our group (who normally doesn't eat fish) to try them. Safe to say- I converted them! They're already asking when the fish tacos will be back. Truly authentic and it's easy to see why the Michelin Guide has listed this spot. I HIGHLY RECOMMEND!! See ya on Wednesdays!! Oh- and the pulque? Chef's kiss!

A.freaking.mazing pozole. Highly recommend everything we tried!! We tried the verde (green poblano, with chicken, least spicy broth), rojo (red, with pork, like traditional , medium spicy) and negra (more spicy with roasted chile flavor). All pozole includes hominy style corn and cabbage. Soups come with lime, red chile sauce and crispy corn tortillas. Water is provided to all tables. Bottled sodas are available alongside full bar service. Dont forget to save room for the chocolate or orange flan dessert.

La Diabla Pozole y Mezcal is easily one of the best spots in the city for a genuine experience. The moment you walk in, you get those perfect warming dive bar vibes—unpretentious, welcoming, and dimly lit in all the right ways. They have a great seating layout with high-top tables for a social feel and a few cozy low tables tucked along the wall for a more traditional meal. The soundtrack is a massive highlight; they lean into a heavy old-school playlist that keeps the energy high but nostalgic. THE FOOD CHICKEN POZOLE: This is soul-healing in a bowl. The broth has that deep, slow-cooked richness that isn't masked by salt. Once you add the radishes, lime, and oregano, it’s incredible comfort food. CARNITAS PAMBAZO STYLE: This was the star of the show. The bread is dipped in guajillo sauce and seared on the griddle, giving it a smoky, slightly spicy crust that holds up against the juicy, tender carnitas inside. It's rich, messy, and absolutely essential. Final Verdict: La Diabla avoids the "fancy fusion" trap and sticks to bold, traditional flavors. Whether you're sitting at the bar for a Mezcal or grabbing a low table by the wall, it’s a 10/10 experience. Highly recommended. ((p.s the drinks sat on the well for at least four minutes before we had to flag down for someone to notice. Old fashioned was touch down. We noticed everyone was on slow mode till the place filled up.))
