If you’re in Denver and haven’t stopped by NOVO Coffee yet, you’re seriously missing out. We had the chance to do a coffee tasting here, and it wasn’t just good — it was memorable. The vibe inside is laid-back but intentional, like a hidden creative hub for coffee nerds and curious wanderers alike. From the first step in, you can tell these folks care about the craft. Special shoutout to Simon and Heather — their passion and knowledge made the entire experience come alive. They didn’t just serve coffee; they told the story behind each bean and roast in a way that made you appreciate every sip a little more. We tasted a lineup that covered the whole flavor spectrum — bright citrus notes, rich cocoa and berry, and even one that had a delicate, floral finish that caught everyone by surprise. Heather brewed each pour-over with precision, and Simon gave us the lowdown on origin, processing, and what to look for in the tasting. It was interactive, engaging, and honestly, kind of eye-opening. Whether you’re a coffee connoisseur or just someone who appreciates a great cup, NOVO offers more than caffeine — it offers connection. Five stars, no question. Excellent place to get high-quality whole bean coffee, both blends and single origin. They also have cans of nitro cold brew for sale, and free samples of said nitro cold brew. They also sell brewing equipment like pour-overs, some tea, and even coffee flower tea, which I never knew was a thing. A now-defunct coffee shop down the street used to serve Novo coffee, and going there all the time turned me into a coffee snob. I can’t believe I actually used to enjoy dark roasts from Starbucks for 15 years. Now it tastes like nasty bean water to me. There’s so much more depth of flavor in a light roast like they sell here.

Just stopped by (didn't take a class there). It's their roastery- so they don't serve coffee other than some excellent (and free) nitro cold brew on tap. Whole beans are available on sale. There are tours and classes - according to an employee there - they have a $20 tour on Fridays that includes a bag of beans (although didn't go myself).
