I booked an omakase experience here for my husband's birthday and we lucked out being the only ones there the Friday after new years day for omakase. We were thrilled to have chef Adam all to ourselves for the evening. He was so personable and knowledgeable and all the rest of the staff we interacted with were as well. It is so obvious that they all take such pride in serving elevated dishes at the highest quality. We got to try some of the new dishes they've added to the omakase menu and were more and more delighted with each new bite. The last sushi course was an amazing finale and the desserts were superb. They even put a candle on the plate for my husband, as they knew we were there celebrating his birthday. From start to finish the whole experience was spectacular and we left feeling perfectly sated. We cannot wait to come back and try their regular menu and the new dishes they come up with. Highly recommend! Definitely well worth the price and the drive up to Denver from Cañon City.

Let me tell you that this has been one of my favorite experiences. The Omakase was fantastic, and the Chief/Owner Adam was super knowledgeable and very interactive. You can definitely tell how much passion he has from seeing his dishes and presentations. The front of house Owner Michael, was very friendly, welcoming, and accommodating all his customers needs. The server we had, T, was very attentive and made sure to always made sure to check in and keep our waters filled up. Professional in every category! Highly recommend the Omamase experience!

Can I give it 10 stars? We had the omakase on Christmas Eve and sat at the sushi counter (must do if you can). Now I've had a lot of omakase in my life in some pretty great places, but this was the most consistently good across all pieces and there were some pieces I've never even had before! The service behind the bar and in the restaurant was impeccable. Chef Adam gave us such great details and answered all our questions. Such a fantastic experience.

Visited for a date, ordering à la carte rather than omakase. While the concept of the restaurant appears calibrated for counter seating and set menus, this should not affect either service standards or execution and unfortunately, it does. The fish is undeniably fresh, though not of a caliber that surpasses what can already be found in stronger sushi markets such as Denver. Tableware and plating show visible wear and feel below the level expected for a restaurant positioning itself in the omakase category. The meal opened with miso soup. Moderately salted and quite pleasant, enriched with mushrooms and noodles that add body and texture. A solid but unremarkable start. Given a fondness for toro, most selections focused on this cut. The toro roll suffered from imbalance: the rice-to-fish ratio leaned heavily toward rice, muting the delicacy and fat-driven nuance that toro should deliver. The Fried Kiss Toro roll was particularly disappointing. The toro was overshadowed by additional ingredients, resulting in a confused flavor profile. The proportions were misaligned, eliminating the richness and mouth-coating quality one expects from toro. Instead of indulgence, the roll felt flat, with neither toro’s flavor nor its signature finish coming through. The special toro nigiri revealed further issues. The rice was slightly firm, and the toro itself carried a watery texture rather than the silky, melting quality expected from this cut. A four-style toro tasting followed but failed to elevate the experience, offering variation without distinction. Service was slow and inattentive. Initial contact took time, and gaps of seven to ten minutes between dishes disrupted the flow of the meal, especially given the relatively compact order. Overall, Hana Matsuri Omakase demonstrates technical competence and fresh sourcing but lacks precision, balance, and refinement. When the primary ingredient is toro, anything that dulls its character becomes immediately apparent. The restaurant shows potential, yet consistency, restraint, and sharper execution are needed to justify its positioning.
